INGREDIENTS AND DOSES PER 3 PEOPLE
Six perch fillets, 150 grams rice, 1 egg, white flour, bread crumbs, 1 lemon, oil, butter, salt, grated Parmesan cheese, sage leaves.

PREPARATION
pass the fish fillets in flour first, then in the egg and then into the bread crumbs. Fry them in a fryingpan with oil and butter, and let them brown on both sides. In the meantime boil the rice in salted water, drain the rice e prepare it on a dish, sprinkle Parmesan Cheese on top. To garnish arrange the fillets on the rice like flower petals. In another saucepan brown the butter with sage leaves then pour it on the garnished dish and serve immediately.
